- 1 can crushed pineapple (undrained)
- 1 cup shredded carrots
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins (optional)
- 1/2 cup vegetable oil
- 4 large eggs
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup cream cheese frosting (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the carrot cake mix, crushed pineapple, shredded carrots, walnuts, raisins, vegetable oil, eggs, cinnamon, and salt.
- Mix until well combined and pour the batter into a greased 9×13 inch baking dish.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for a few minutes before spreading the cream cheese frosting on top.
- Serve warm or at room temperature and enjoy!
