A delicious and easy-to-make appetizer that combines the sweetness of carrots with the creaminess of cheese.
Ingredients

- 2 cups grated carrots
- 1 cup cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1/4 cup chopped walnuts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (for coating)
Instructions
- In a large bowl, combine grated carrots, cream cheese, cheddar cheese, green onions, walnuts, garlic powder, onion powder, salt, and pepper.
- Mix until all ingredients are well combined.
- Form the mixture into a ball shape.
- Roll the cheese ball in breadcrumbs until fully coated.
- Wrap in plastic wrap and refrigerate for at least 1 hour to firm up.
- Serve with crackers or vegetable sticks.
