Description
A deliciously creamy carrot cheesecake that combines the flavors of carrot cake with the richness of cheesecake.
Ingredients

- 2 cups grated carrots
- 1 cup cream cheese, softened
- 1 cup sugar
- 1/2 cup sour cream
- 1/2 cup all-purpose flour
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the grated carrots, cream cheese, and sugar until well combined.
- Add the sour cream, flour, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
- If using, fold in the chopped walnuts.
- Pour the mixture into a greased 9-inch springform pan.
- Bake for 45-50 minutes or until the center is set and a toothpick comes out clean.
- Allow to cool before removing from the pan.
- Chill in the refrigerator for at least 4 hours before serving.
