Description

A deliciously creamy carrot cheesecake that combines the flavors of carrot cake with the richness of cheesecake.


Ingredients

  • 2 cups grated carrots
  • 1 cup cream cheese, softened
  • 1 cup sugar
  • 1/2 cup sour cream
  • 1/2 cup all-purpose flour
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the grated carrots, cream cheese, and sugar until well combined.
  3. Add the sour cream, flour, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
  4. If using, fold in the chopped walnuts.
  5. Pour the mixture into a greased 9-inch springform pan.
  6. Bake for 45-50 minutes or until the center is set and a toothpick comes out clean.
  7. Allow to cool before removing from the pan.
  8. Chill in the refrigerator for at least 4 hours before serving.
