Ingredients

- 4 cups grated carrots
- 1 cup raisins
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1/4 cup chopped walnuts (optional)
- Salt and pepper to taste
Instructions
- In a large bowl, combine the grated carrots and raisins.
- In a separate bowl, mix together the mayonnaise and lemon juice.
- Pour the mayonnaise mixture over the carrot and raisin mixture and stir until well combined.
- Add chopped walnuts if using, and season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
