Description

A refreshing and healthy salad perfect for spring, combining the sweetness of raisins with crunchy carrots.


Ingredients

Scale
  • 4 cups grated carrots
  • 1 cup raisins
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 cup chopped walnuts (optional)
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the grated carrots and raisins.
  2. In a separate bowl, mix together the mayonnaise and lemon juice.
  3. Pour the mayonnaise mixture over the carrot and raisin mixture and stir until well combined.
  4. Add chopped walnuts if using, and season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.
