Description
A delicious and easy-to-make taco pie that is perfect for spring dinners, made in a cast iron skillet.
Ingredients

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup shredded cheese
- 1 package refrigerated pie crusts
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- In a cast iron skillet, brown the ground beef over medium heat.
- Add the black beans, corn, taco seasoning, and salsa to the skillet, stirring to combine.
- Remove from heat and sprinkle half of the cheese over the mixture.
- Unroll the pie crust and place it over the beef mixture, pressing down the edges to seal.
- Cut slits in the top of the crust to allow steam to escape.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- Remove from the oven and sprinkle the remaining cheese on top, then return to the oven for an additional 5 minutes.
- Garnish with green onions and cilantro before serving.
