Description

A delicious and easy-to-make taco pie that is perfect for spring dinners, made in a cast iron skillet.


Ingredients

Scale
  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 package refrigerated pie crusts
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a cast iron skillet, brown the ground beef over medium heat.
  3. Add the black beans, corn, taco seasoning, and salsa to the skillet, stirring to combine.
  4. Remove from heat and sprinkle half of the cheese over the mixture.
  5. Unroll the pie crust and place it over the beef mixture, pressing down the edges to seal.
  6. Cut slits in the top of the crust to allow steam to escape.
  7. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  8. Remove from the oven and sprinkle the remaining cheese on top, then return to the oven for an additional 5 minutes.
  9. Garnish with green onions and cilantro before serving.
