Delightful cookies infused with chamomile and topped with tangy lemon icing, perfect for cozy moments or gatherings.

Ingredients

Scale
  • 2 cups All-Purpose Flour (Gluten-free flour blend can be used for a gluten-free version.)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 cup Cornstarch
  • 1/4 teaspoon Salt
  • 1 cup Unsalted Butter (Vegan butter works for dairy-free.)
  • 1 cup Granulated Sugar
  • 1 large Egg
  • 1/2 cup Sour Cream (Can substitute with Greek yogurt.)
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Dried Chamomile Flowers
  • 1 tablespoon Lemon Zest
  • 1 cup Powdered Sugar
  • 1/2 teaspoon Vanilla Extract (for icing)
  • 2 tablespoons Milk (Adjust for desired icing consistency.)
  • 1 tablespoon Lemon Juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, cornstarch, and salt in a medium bowl.
  3. Cream the unsalted butter and granulated sugar in a large mixing bowl until light and fluffy.
  4. Beat in the egg, sour cream, and vanilla extract until well combined.
  5. Stir in the dried chamomile flowers and lemon zest until evenly incorporated.
  6. Gradually add the flour mixture to the wet ingredients, mixing just until combined.
  7. Scoop tablespoon-sized portions of dough and place them onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. In a small bowl, combine the powdered sugar, vanilla extract, milk, and lemon juice to create the icing. Adjust the milk to achieve your desired consistency.
  11. Drizzle the icing over the cooled cookies and let it set before serving.
