Ingredients

- 2 large flour tortillas
- 1 cup cooked ground beef
- 1 cup shredded cheddar cheese
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/4 cup pickles, chopped
- 1 tablespoon ketchup
- 1 tablespoon mustard
- Cooking spray or oil for frying
Instructions
- In a bowl, mix the cooked ground beef with ketchup and mustard.
- On one tortilla, layer half of the cheese, followed by the beef mixture, onions, tomatoes, and pickles.
- Top with the remaining cheese and place the second tortilla on top.
- Heat a skillet over medium heat and spray with cooking spray or add a little oil.
- Carefully place the quesadilla in the skillet and cook for 3-4 minutes until golden brown.
- Flip the quesadilla and cook the other side for another 3-4 minutes until the cheese is melted.
- Remove from the skillet, let it cool for a minute, then cut into wedges and serve.
Notes
- Feel free to add other toppings like jalapeños or avocado.
- Serve with salsa or sour cream for dipping.
