Ingredients

  • 2 large flour tortillas
  • 1 cup cooked ground beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/4 cup pickles, chopped
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • Cooking spray or oil for frying

Instructions

  1. In a bowl, mix the cooked ground beef with ketchup and mustard.
  2. On one tortilla, layer half of the cheese, followed by the beef mixture, onions, tomatoes, and pickles.
  3. Top with the remaining cheese and place the second tortilla on top.
  4. Heat a skillet over medium heat and spray with cooking spray or add a little oil.
  5. Carefully place the quesadilla in the skillet and cook for 3-4 minutes until golden brown.
  6. Flip the quesadilla and cook the other side for another 3-4 minutes until the cheese is melted.
  7. Remove from the skillet, let it cool for a minute, then cut into wedges and serve.
