Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the red food coloring until the dough is evenly colored.
  7. In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract for the filling until smooth.
  8. Take a tablespoon of cookie dough, flatten it, and place a teaspoon of the cream cheese filling in the center. Fold the dough over the filling and roll into a ball.
  9. Place the cookie balls on a baking sheet lined with parchment paper, spacing them apart.
  10. Bake for 10-12 minutes or until the edges are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
