- 1 medium spaghetti squash
- 1 lb ground beef or turkey
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil on the cut sides and season with salt and pepper.
- Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
- While the squash is roasting, cook the ground beef or turkey in a skillet over medium heat until browned.
- Add the minced garlic, oregano, and basil to the meat and cook for an additional 2 minutes.
- Stir in the marinara sauce and let it simmer for 5 minutes.
- Once the squash is done, use a fork to scrape the flesh into spaghetti-like strands.
- Mix the spaghetti squash with the meat sauce and transfer to a baking dish.
- Top with shredded mozzarella cheese and bake for an additional 10 minutes until the cheese is melted and bubbly.
Notes
- For a vegetarian option, substitute the meat with lentils or mushrooms.
- Feel free to add more vegetables to the meat sauce, such as bell peppers or onions.
- This dish can be made ahead of time and reheated in the oven.
