Description

Ingredients

  • 1 medium spaghetti squash
  • 1 lb ground beef or turkey
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil on the cut sides and season with salt and pepper.
  4. Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
  5. While the squash is roasting, cook the ground beef or turkey in a skillet over medium heat until browned.
  6. Add the minced garlic, oregano, and basil to the meat and cook for an additional 2 minutes.
  7. Stir in the marinara sauce and let it simmer for 5 minutes.
  8. Once the squash is done, use a fork to scrape the flesh into spaghetti-like strands.
  9. Mix the spaghetti squash with the meat sauce and transfer to a baking dish.
  10. Top with shredded mozzarella cheese and bake for an additional 10 minutes until the cheese is melted and bubbly.

  • For a vegetarian option, substitute the meat with lentils or mushrooms.
  • Feel free to add more vegetables to the meat sauce, such as bell peppers or onions.
