Ingredients

- 1 bag (30 oz) frozen hashbrowns
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup chopped onion
- 1/4 cup melted butter
- 1 cup crushed cornflakes
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the frozen hashbrowns, cheddar cheese, sour cream, cream of chicken soup, chopped onion, and melted butter.
- Mix well until all ingredients are evenly combined.
- Transfer the mixture to a greased 9×13 inch baking dish.
- In a separate bowl, mix the crushed cornflakes and grated Parmesan cheese.
- Sprinkle the cornflake mixture evenly over the top of the casserole.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the casserole is heated through.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños to the mixture.
- This casserole can be prepared ahead of time and refrigerated before baking.
- Leftovers can be stored in the refrigerator for up to 3 days.
