Description
A delicious and creamy gratin made with butternut squash, herbs, and a crispy panko topping.
Ingredients

- 2 medium butternut squash, peeled and diced
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or Gruyère)
- 1/2 cup panko breadcrumbs
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, boil the diced butternut squash until tender, about 10-15 minutes.
- Drain the squash and return it to the pot.
- Add the heavy cream, shredded cheese, thyme, rosemary, salt, and pepper to the squash and mix well.
- Transfer the mixture to a greased baking dish.
- In a small bowl, combine the panko breadcrumbs with olive oil and sprinkle over the top of the squash mixture.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
- Let it cool for a few minutes before serving.
Notes
- For a lighter version, you can substitute half-and-half for heavy cream.
- Feel free to add other herbs or spices to customize the flavor.
- This dish can be prepared ahead of time and baked just before serving.
