Description

A delicious and creamy gratin made with butternut squash, herbs, and a crispy panko topping.


Ingredients

  • 2 medium butternut squash, peeled and diced
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Gruyère)
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, boil the diced butternut squash until tender, about 10-15 minutes.
  3. Drain the squash and return it to the pot.
  4. Add the heavy cream, shredded cheese, thyme, rosemary, salt, and pepper to the squash and mix well.
  5. Transfer the mixture to a greased baking dish.
  6. In a small bowl, combine the panko breadcrumbs with olive oil and sprinkle over the top of the squash mixture.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
  8. Let it cool for a few minutes before serving.

  • For a lighter version, you can substitute half-and-half for heavy cream.
