Ingredients

- 4 large potatoes, peeled and diced
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large flour tortillas
- 1 tablespoon olive oil
Instructions
- Boil the diced potatoes in salted water until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add the cheese, sour cream, garlic powder, onion powder, salt, and pepper to the potatoes. Mash until well combined.
- Heat olive oil in a skillet over medium heat.
- Place a tortilla in the skillet, add a generous amount of the potato mixture, and fold the tortilla over to form a burrito.
- Cook each side of the burrito until golden brown, about 3-4 minutes per side.
- Repeat with remaining tortillas and filling.
- Serve warm and enjoy!
