Ingredients

  • 1 package of taco seasoning
  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1 package of wonton wrappers
  • 1 can black beans, drained and rinsed
  • 1 cup corn, drained
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Cooking spray

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir to combine and heat through.
  4. Spray a muffin tin with cooking spray. Place a wonton wrapper in each muffin cup, pressing down to form a cup.
  5. Fill each wonton cup with the beef mixture and top with shredded cheddar cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the wonton wrappers are golden brown.
  7. Remove from the oven and garnish with chopped green onions before serving.
