Description

A delicious and easy-to-make cheesy taco pasta that combines the flavors of tacos with the comfort of pasta.


Ingredients

  • 8 oz elbow macaroni
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 2 cups beef broth
  • 1 cup corn (optional)
  • Chopped green onions for garnish

Instructions

  1. Cook the elbow macaroni according to package instructions; drain and set aside.
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the taco seasoning, diced tomatoes, and beef broth to the skillet; stir to combine.
  4. Bring the mixture to a simmer and let it cook for about 5 minutes.
  5. Stir in the cooked macaroni, corn (if using), sour cream, and half of the cheddar cheese.
  6. Mix well and cook until heated through.
  7. Top with the remaining cheddar cheese and let it melt before serving.
  8. Garnish with chopped green onions and serve hot.

Notes

  • For a spicier version, add jalapeños or hot sauce.
