Description

A delicious and easy recipe for cheesy taco stuffed peppers, perfect for a quick weeknight dinner.


Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1/2 cup salsa

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground beef until browned, then drain excess fat.
  4. Add taco seasoning, cooked rice, black beans, corn, and salsa to the skillet. Mix well.
  5. Stuff the mixture into the bell peppers and place them in a baking dish.
  6. Top each pepper with shredded cheese.
  7. Bake in the preheated oven for 25-30 minutes, until the peppers are tender.
