  • 2 cups (270g) all-purpose flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, frozen and grated or cut into small cubes
  • 1/2 cup + 1 tablespoon heavy cream
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 1 cup fresh cherries (pitted and sliced)
  • 1/2 cup confectioner’s sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon almond extract
  • 1/4 cup sliced almonds, toasted

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking sheet with parchment paper.
  3. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  4. Add the frozen and grated butter, mixing until the mixture resembles coarse crumbs.

  11. Whisk together the confectioner’s sugar, 2 tablespoons of heavy cream, and 1/2 teaspoon of almond extract until smooth.
  12. Drizzle the glaze over the warm scones.
  13. Sprinkle the toasted sliced almonds on top for a delightful crunch.

Notes

For those looking to lower sugar intake, consider using stevia, monk fruit, or allulose as a sweetener.
