Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen cherries, pitted and halved
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix together flour, sugar, and salt.
  3. Add the softened butter and vanilla extract, and mix until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish.
  5. In another bowl, combine cherries, cornstarch, and lemon juice, then spread the cherry mixture over the crust.
  6. Sprinkle the remaining crumb mixture over the cherries.
  7. Bake for 30-35 minutes or until the top is golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • For a sweeter taste, you can add more sugar to the cherry mixture.
  • These bars can be served warm or cold.
  • Store leftovers in an airtight container in the refrigerator.
