  • 1 cup cherry pie filling
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Take a tablespoon of dough and flatten it in your hand, placing a small spoonful of cherry pie filling in the center.
  7. Fold the dough over the filling and roll it into a ball, sealing the edges.
  8. Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Allow to cool slightly before dusting with powdered sugar.
