- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Take a tablespoon of dough and flatten it in your hand, placing a small spoonful of cherry pie filling in the center.
- Fold the dough over the filling and roll it into a ball, sealing the edges.
- Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool slightly before dusting with powdered sugar.
Notes
- For a more intense cherry flavor, add a few drops of almond extract to the dough.
