- 2 cups cooked chicken, shredded
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 4 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup tortilla strips
- 1 cup shredded cheese (optional)
- 1 avocado, diced (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, combine the chicken broth, diced tomatoes, black beans, corn, chili powder, cumin, garlic powder, salt, and pepper.
- Bring the mixture to a boil over medium heat.
- Add the shredded chicken and reduce the heat to a simmer.
- Let the soup simmer for about 20 minutes to allow the flavors to meld.
- Serve hot, topped with tortilla strips, cheese, avocado, and cilantro if desired.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a spicier version, add jalapeños or hot sauce.
