Ingredients

- 2 cups cooked chicken, diced
- 1 cup mushrooms, sliced
- 1/2 cup green bell pepper, diced
- 1/2 cup onion, diced
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 1/4 cup peas (optional)
- Cooked rice or pasta for serving
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the onions, bell peppers, and mushrooms, and sauté until softened.
- Stir in the flour and cook for 1-2 minutes.
- Gradually whisk in the chicken broth and bring to a simmer.
- Add the heavy cream and stir until the mixture is thickened.
- Fold in the cooked chicken and peas, and season with salt and pepper.
- Serve over cooked rice or pasta.
Notes
- For a lighter version, you can use half-and-half instead of heavy cream.
- This dish can be made ahead of time and reheated before serving.
