Making a chicken and cheese jalousie at home is easier than it looks. Buttery puff pastry encases a savory, cheesy filling, making this dish both comforting and bakery-worthy.

- 2 sheets store-bought puff pastry (thawed but still cold)
- 2 cups cooked chicken (shredded or diced)
- 1 cup shredded cheese (sharp cheddar, Gruyère, or mozzarella)
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil or butter
- 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
- ½ cup baby spinach (optional)
- Salt and black pepper, to taste
- 1 egg, beaten (for egg wash)
- 1 tsp sesame or poppy seeds (optional)
Instructions
- Heat olive oil or butter in a skillet. Sauté onion until translucent, then add garlic and cook for 30 seconds.
- Stir in chicken, thyme, salt, pepper, and spinach. Remove from heat and fold in cheese.
- Roll out pastry on a floured surface. Place one sheet on a parchment-lined tray.
- Spoon filling down the center, leaving a 1-inch border.
- Top with second sheet. Cut diagonal slits, then seal edges with a fork.
- Brush with beaten egg, sprinkle seeds if using, and bake at 400°F (200°C) for 25–30 minutes.
- Cool for 5 minutes, slice, and serve warm.

Optional: Serve with a light green salad or roasted vegetables for a complete meal.
