Ingredients

  • 2 sheets store-bought puff pastry (thawed but still cold)
  • 2 cups cooked chicken (shredded or diced)
  • 1 cup shredded cheese (sharp cheddar, Gruyère, or mozzarella)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil or butter
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • ½ cup baby spinach (optional)
  • Salt and black pepper, to taste
  • 1 egg, beaten (for egg wash)
  • 1 tsp sesame or poppy seeds (optional)

Instructions

  1. Heat olive oil or butter in a skillet. Sauté onion until translucent, then add garlic and cook for 30 seconds.
  2. Stir in chicken, thyme, salt, pepper, and spinach. Remove from heat and fold in cheese.
  3. Roll out pastry on a floured surface. Place one sheet on a parchment-lined tray.
  4. Spoon filling down the center, leaving a 1-inch border.
  5. Top with second sheet. Cut diagonal slits, then seal edges with a fork.
  6. Brush with beaten egg, sprinkle seeds if using, and bake at 400°F (200°C) for 25–30 minutes.
  7. Cool for 5 minutes, slice, and serve warm.

Optional: Serve with a light green salad or roasted vegetables for a complete meal.
