Ingredients
Scale
- 1 whole chicken, cut into pieces
- 4 cups chicken broth
- 1 cup milk
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup butter, melted
- 1 cup frozen mixed vegetables (optional)
Instructions
- In a large pot, combine the chicken pieces and chicken broth. Bring to a boil and then reduce to a simmer.
- Cook the chicken for about 30 minutes, or until fully cooked. Remove the chicken and let it cool, then shred the meat.
- Add the milk to the broth and stir well.
- In a separate bowl, mix the flour, baking powder, salt, and pepper. Stir in the melted butter until combined.
- Drop spoonfuls of the dumpling mixture into the simmering broth. Cook for about 15 minutes, or until the dumplings are fluffy and cooked through.
- Add the shredded chicken and mixed vegetables (if using) back into the pot. Stir gently to combine and heat through.
- Serve hot and enjoy your comforting chicken and dumplings!
Notes
- For a richer flavor, you can sauté onions and garlic before adding the chicken to the broth.
- Feel free to customize the vegetables based on your preference.
- This dish can be made in advance and reheated, but the dumplings are best fresh.
