- 1½ lbs boneless skinless chicken thighs
- 1 medium onion
- 4 garlic cloves
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp salt
- ½ tsp black pepper
- 1 cup chicken broth
- 1 tbsp apple cider vinegar
- 12 small corn tortillas
- 1 cup shredded cheese
- ¼ cup chopped cilantro
- 1 lime
Instructions
- Sauté onions and garlic in olive oil.
- Add chicken and cook until lightly browned.
- Add spices and tomato paste, stirring well.
- Pour in broth and vinegar, simmer until thickened.
- Dip tortillas in broth and warm them in the skillet.
- Fill with chicken and cheese, fold gently.
- Fry until crispy on both sides.
- Garnish with cilantro and serve with lime.
Notes
For an even richer flavor, marinate the chicken in spices for a few hours or overnight. Fresh ingredients are key for the best taste.
