Description

A deliciously creamy and cheesy casserole featuring chicken, rice, and broccoli, perfect for family gatherings or cozy dinners.


Ingredients

  • 2 cups (300 g) cooked chicken, shredded or diced
  • 2 cups (300 g) cooked rice
  • 2 cups (200 g) broccoli florets, lightly steamed
  • 1 can (10.5 oz / 300 g) condensed cream of chicken or mushroom soup
  • 1/2 cup (120 ml) milk
  • 1 1/2 cups (180 g) shredded cheddar cheese, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Optional topping: 1/2 cup (50 g) breadcrumbs
  • Optional topping: 1 tablespoon melted butter


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch (23×33 cm) baking dish.
  3. Mix the casserole: In a large bowl, combine cooked chicken, rice, broccoli, condensed soup, milk, 1 cup of cheese, salt, pepper, and garlic powder. Mix well.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Sprinkle remaining cheese over the top. If using, mix breadcrumbs with melted butter and sprinkle on top.
  6. Bake for 30–35 minutes, until hot and bubbly.
  7. Let cool slightly before serving.

Notes

For a lower-carb version, consider using sugar substitutes like Stevia, Monk fruit, or Allulose.
