A delicious and healthy chicken burrito casserole perfect for spring dinners.
Ingredients

- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups cooked brown rice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (dairy-free if needed)
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, brown rice, cumin, and chili powder.
- Spread the mixture evenly in a greased 9×13 inch baking dish.
- Top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is melted.
- Garnish with fresh cilantro before serving.
