Description

A delicious and healthy chicken burrito casserole perfect for spring dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups cooked brown rice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (dairy-free if needed)
  • Fresh cilantro for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, brown rice, cumin, and chili powder.
  3. Spread the mixture evenly in a greased 9×13 inch baking dish.
  4. Top with shredded cheese.
  5. Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is melted.
  6. Garnish with fresh cilantro before serving.
