- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 1 tablespoon fajita seasoning
- 1 cup shredded cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the diced chicken until browned.
- Add the sliced bell pepper and onion, cooking until softened.
- Stir in the black beans, corn, salsa, and fajita seasoning.
- Mix in the cooked rice until well combined.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
