Description

A flavorful one-pan delight that combines chicken, rice, and fajita spices for a delicious meal.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 tablespoon fajita seasoning
  • 1 cup shredded cheese


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the diced chicken until browned.
  3. Add the sliced bell pepper and onion, cooking until softened.
  4. Stir in the black beans, corn, salsa, and fajita seasoning.
  5. Mix in the cooked rice until well combined.
  6. Transfer the mixture to a baking dish and top with shredded cheese.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
