Description

A classic French dish with a rich blend of chicken, tomatoes, and herbs, perfect for cozy evenings.


Ingredients

  • 1 whole chicken, cut into pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomatoes, diced (or 1 can of diced tomatoes)
  • 1 cup chicken stock
  • 1/2 cup white wine
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup mushrooms, sliced
  • 2 tablespoons chopped fresh parsley for garnish


Instructions

  1. Heat olive oil over medium heat in a large pot. Add the chicken pieces and brown on all sides.
  2. Remove the chicken and set aside.
  3. Add the onion and garlic to the same pot; sauté until softened.
  4. Stir in the tomatoes, chicken stock, wine, thyme, basil, salt, and pepper. Bring to a simmer.
  5. Return the chicken to the pot, cover, and cook for about 30-40 minutes, or until the chicken is cooked through.
  6. Add the mushrooms in the last 10 minutes of cooking.
  7. Garnish with fresh parsley before serving.

Notes

For best flavor, use fresh herbs; deglazing the pot after sautéing can enhance the sauce.
