- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- 4 tablespoons butter
- 1/2 cup chicken broth
- 1/2 cup fresh lemon juice
- 1/4 cup capers
- 2 tablespoons fresh parsley, chopped
Instructions
- Season chicken with salt and pepper, then dredge in flour.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
- Cook the chicken for about 4-5 minutes on each side until golden brown and cooked through.
- Remove chicken and set aside.
- In the same skillet, add chicken broth, lemon juice, and capers, bringing the mixture to a boil.
- Return the chicken to the skillet and simmer for 5 minutes.
- Remove chicken and whisk in remaining butter until melted.
- Serve the chicken topped with sauce and parsley.
Notes
