A delicious and easy recipe for Chicken Satay served with a flavorful Thai Peanut Sauce.

- 1 lb chicken breast, cut into strips
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 tablespoon brown sugar
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Wooden skewers, soaked in water
- For the Thai Peanut Sauce:
- 1/2 cup peanut butter
- 1/4 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 teaspoon red pepper flakes (optional)
Instructions
- In a bowl, mix soy sauce, vegetable oil, brown sugar, garlic, and ginger.
- Add chicken strips to the marinade and let it sit for at least 30 minutes.
- Preheat the grill or grill pan over medium heat.
- Thread the marinated chicken onto the soaked wooden skewers.
- Grill the chicken skewers for about 5-7 minutes on each side, or until fully cooked.
- While the chicken is grilling, prepare the Thai Peanut Sauce by combining all sauce ingredients in a bowl and mixing until smooth.
- Serve the grilled chicken satay with the Thai Peanut Sauce for dipping.
Notes
- For extra flavor, marinate the chicken overnight.
- Adjust the spiciness of the sauce by adding more or less red pepper flakes.
- Serve with fresh vegetables or rice for a complete meal.
