  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté garlic and spinach until wilted.
  3. In a bowl, mix ricotta, mozzarella, Parmesan, egg, sautéed spinach, Italian seasoning, salt, and pepper.
  4. Flatten chicken breasts and place a portion of the cheese mixture on each.
  5. Roll the chicken breasts tightly and secure with toothpicks.
  6. Place the rollatini in a baking dish and cover with marinara sauce.
  7. Bake for 25-30 minutes until chicken is cooked through.
  8. Remove toothpicks and serve hot.
