Ingredients

- 2 cups cooked brown rice
- 1 lb chicken breast, diced
- 2 medium sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- While the sweet potatoes are roasting, heat a skillet over medium heat and cook the diced chicken until fully cooked and golden brown.
- In a bowl, layer the cooked brown rice, roasted sweet potatoes, and cooked chicken.
- Garnish with fresh parsley before serving.
