Description

A delicious one-pan family meal that combines chicken, rice, and taco flavors for a quick and easy dinner.


Ingredients

  • 1 lb ground chicken
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground chicken over medium heat until fully cooked.
  2. Add the rice, chicken broth, black beans, corn, and taco seasoning to the skillet.
  3. Stir well and bring to a boil, then reduce heat to low and cover.
  4. Simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Stir in the diced tomatoes and half of the cheese, mixing until melted.
  6. Top with the remaining cheese and cover until melted.
  7. Garnish with chopped cilantro before serving.
