- 1 lb ground chicken
- 1 cup uncooked rice
- 2 cups chicken broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground chicken over medium heat until fully cooked.
- Add the rice, chicken broth, black beans, corn, and taco seasoning to the skillet.
- Stir well and bring to a boil, then reduce heat to low and cover.
- Simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
- Stir in the diced tomatoes and half of the cheese, mixing until melted.
- Top with the remaining cheese and cover until melted.
- Garnish with chopped cilantro before serving.

- Feel free to add your favorite toppings like avocado or sour cream.
