A refreshing summer salad combining chickpeas and peaches with a zesty honey lime dressing.
Ingredients

- 1 can chickpeas, drained and rinsed
- 2 ripe peaches, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons olive oil
- 1 tablespoon honey
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, diced peaches, red onion, and cilantro.
- In a separate small bowl, whisk together the olive oil, honey, lime juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- If using, sprinkle feta cheese on top before serving.
- Serve chilled or at room temperature.
Notes
- For a vegan option, omit the feta cheese.
- This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
