Description

A refreshing summer salad combining chickpeas and peaches with a zesty honey lime dressing.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 ripe peaches, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, diced peaches, red onion, and cilantro.
  2. In a separate small bowl, whisk together the olive oil, honey, lime juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. If using, sprinkle feta cheese on top before serving.
  5. Serve chilled or at room temperature.

Notes

  • For a vegan option, omit the feta cheese.
