- 2 chicken breasts
- 1 tablespoon chipotle seasoning
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup lettuce, chopped
- 1/2 cup corn
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
- Salt and pepper to taste
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Season the chicken breasts with chipotle seasoning, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side, or until cooked through.
- Remove from the grill and let it rest for a few minutes, then slice into strips.
- To assemble, place a tortilla on a flat surface.
- Layer with rice, black beans, grilled chicken, diced tomatoes, lettuce, corn, and drizzle with chipotle ranch dressing.
- Roll up the burrito, tucking in the ends, and enjoy!
Notes
For deeper flavor, marinate the chicken in chipotle seasoning for at least 30 minutes before grilling.
