Description

Delicious and crispy pizzelle cookies filled with a rich chocolate cannoli cream.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1/2 cup mini chocolate chips
  • 1/4 teaspoon cinnamon

Instructions

  1. In a bowl, mix together flour, cocoa powder, and sugar.
  2. Add melted butter, eggs, and vanilla extract; mix until smooth.
  3. Preheat a pizzelle maker and pour a small amount of batter onto the center of the maker.
  4. Close the lid and cook until golden brown, about 30 seconds.
  5. Remove the pizzelle and let cool on a wire rack.
  6. In another bowl, combine ricotta cheese, powdered sugar, mini chocolate chips, and cinnamon.
  7. Spread the chocolate cannoli filling between two pizzelle cookies to form a sandwich.
  8. Repeat with remaining pizzelle and filling.

Notes

  • Store sandwiches in the refrigerator for up to 3 days.
  • For a richer flavor, add a splash of espresso to the filling.
  • Dust with additional powdered sugar before serving.
