Description
Delicious and crispy pizzelle cookies filled with a rich chocolate cannoli cream.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup ricotta cheese
- 1/2 cup powdered sugar
- 1/2 cup mini chocolate chips
- 1/4 teaspoon cinnamon
Instructions
- In a bowl, mix together flour, cocoa powder, and sugar.
- Add melted butter, eggs, and vanilla extract; mix until smooth.
- Preheat a pizzelle maker and pour a small amount of batter onto the center of the maker.
- Close the lid and cook until golden brown, about 30 seconds.
- Remove the pizzelle and let cool on a wire rack.
- In another bowl, combine ricotta cheese, powdered sugar, mini chocolate chips, and cinnamon.
- Spread the chocolate cannoli filling between two pizzelle cookies to form a sandwich.
- Repeat with remaining pizzelle and filling.
Notes
- Store sandwiches in the refrigerator for up to 3 days.
- For a richer flavor, add a splash of espresso to the filling.
- Dust with additional powdered sugar before serving.
