Ingredients

- 3 ½ cups All-purpose flour
- 1 cup Whole milk (cold)
- 1 tbsp Active dry yeast
- ¼ cup Granulated sugar
- 1 ½ tsp Fine salt
- 1 cup Unsalted butter (cold)
- 12 bars Dark or semi-sweet chocolate
- 1 Egg, beaten (for egg wash)
- 1 tbsp Water (for egg wash)
- Optional: Milk or white chocolate
- Optional: tbsp Sugar (for sprinkling)
Instructions
- Mix in a large bowl flour, yeast, sugar, salt, and cold milk until the dough comes together.
- Knead lightly until smooth.
- Wrap in plastic and refrigerate overnight.
- Shape cold butter into a flat rectangle between parchment paper.
- Chill until firm.
- Roll out dough into a large rectangle.
- Place butter block in center and fold like a letter.
- Roll gently to flatten and refrigerate for 30 minutes.
- Repeat rolling and folding one more time.
- Chill overnight.
