Description

Delightful chocolate croissants filled with rich, molten chocolate and enveloped in flaky, buttery pastry.


Ingredients

Scale
  • 3 ½ cups All-purpose flour
  • 1 cup Whole milk (cold)
  • 1 tbsp Active dry yeast
  • ¼ cup Granulated sugar
  • 1 ½ tsp Fine salt
  • 1 cup Unsalted butter (cold)
  • 12 bars Dark or semi-sweet chocolate
  • 1 Egg, beaten (for egg wash)
  • 1 tbsp Water (for egg wash)
  • Optional: Milk or white chocolate
  • Optional: tbsp Sugar (for sprinkling)


Instructions

  1. Mix in a large bowl flour, yeast, sugar, salt, and cold milk until the dough comes together.
  2. Knead lightly until smooth.
  3. Wrap in plastic and refrigerate overnight.
  4. Shape cold butter into a flat rectangle between parchment paper.
  5. Chill until firm.
  6. Roll out dough into a large rectangle.
  7. Place butter block in center and fold like a letter.
  8. Roll gently to flatten and refrigerate for 30 minutes.
  9. Repeat rolling and folding one more time.
  10. Chill overnight.
