  • 1/2 cup fresh strawberries, pureed
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract and strawberry puree until well combined.
  4. Gradually add the flour and salt, mixing until a dough forms.
  5. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  6. Flatten each ball slightly with the bottom of a glass.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Let the cookies cool completely on a wire rack.
  9. In a microwave-safe bowl, melt the chocolate chips and coconut oil together until smooth.
  10. Dip each cookie halfway into the melted chocolate and place them back on the parchment paper to set.
