- 1/2 cup fresh strawberries, pureed
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract and strawberry puree until well combined.
- Gradually add the flour and salt, mixing until a dough forms.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball slightly with the bottom of a glass.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Let the cookies cool completely on a wire rack.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil together until smooth.
- Dip each cookie halfway into the melted chocolate and place them back on the parchment paper to set.
- Allow the chocolate to harden before serving.
Notes
- For a more intense strawberry flavor, add more strawberry puree.
- Store cookies in an airtight container for up to a week.
- Feel free to use white chocolate instead of semi-sweet chocolate for a different flavor.
