- 1 chocolate cake, cut into cubes (store-bought or homemade)
- 1 cup freeze-dried strawberries
- 1 cup heavy cream
- 3 tbsp powdered sugar
- 1 tsp LorAnn Oils Strawberry Emulsion (optional)
- 1 cup fresh strawberries, hulled and sliced
- 2 tbsp sugar
- 1 tbsp water
- 1 tsp lemon juice
- Fresh strawberries, washed and dried
- Semi-sweet chocolate chips
Instructions
- Prepare the Strawberry Mousse
- Whip the heavy cream with powdered sugar until soft peaks form.
- Fold in the freeze-dried strawberries and LorAnn Oils Strawberry Emulsion (if using) gently.
- Prepare the Strawberry Compote
- Combine fresh strawberries, sugar, water, and lemon juice in a small saucepan.
- Cook over medium heat until the mixture thickens.
- Prepare the Chocolate-Covered Strawberries
- Melt semi-sweet chocolate chips in a microwave-safe bowl.
- Dip fresh strawberries in the melted chocolate, then place on parchment paper to set.
- Assemble the Parfaits
- Layer chocolate cake cubes at the bottom of serving glasses.
- Add a layer of strawberry mousse on top.
- Spoon some strawberry compote over the mousse.
- Repeat the layers until the glasses are filled, ending with a mousse layer.
- Garnish and Serve
- Top with chocolate-covered strawberries for a beautiful finish.
- Serve immediately or chill until ready to serve.
