Ingredients

- 1 lb flank steak
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp cumin
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 avocado, sliced
- 1/2 cup diced tomatoes
Instructions
- In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper.
- Marinate the flank steak in the mixture for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the steak for about 6-8 minutes on each side, or until desired doneness.
- Let the steak rest for 5 minutes before slicing it thinly.
- In bowls, layer cooked rice, black beans, corn, sliced steak, avocado, and diced tomatoes.
- Drizzle with additional lime juice and garnish with cilantro if desired.
Notes
- For a spicier kick, add jalapeños to the bowls.
- This recipe can be made with chicken or shrimp instead of steak.
- Leftovers can be stored in the refrigerator for up to 3 days.
