Ingredients

  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 avocado, sliced
  • 1/2 cup diced tomatoes

Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the steak for about 6-8 minutes on each side, or until desired doneness.
  5. Let the steak rest for 5 minutes before slicing it thinly.
  6. In bowls, layer cooked rice, black beans, corn, sliced steak, avocado, and diced tomatoes.
  7. Drizzle with additional lime juice and garnish with cilantro if desired.

Notes

  • For a spicier kick, add jalapeños to the bowls.
