Description

Deliciously soft and chewy cookies that combine the flavors of cinnamon rolls with the simplicity of sugar cookies.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon almond extract
  • 1/2 cup powdered sugar (for icing)
  • 1 tablespoon milk (for icing)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, ground cinnamon, and almond extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. While the cookies are baking, prepare the icing by mixing powdered sugar and milk until smooth.
  9. Once the cookies are cool, drizzle the icing over the top.
