Deliciously soft and fluffy muffins coated in cinnamon sugar, perfect for breakfast or a sweet treat.

- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 large egg
- ½ cup milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- ¼ cup melted butter
- ½ cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, mix the egg, milk, vegetable oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill each muffin cup about ¾ full with the batter.
- Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, mix the sugar and cinnamon for the coating in a small bowl.
- Once the muffins are done, let them cool for a few minutes, then dip the tops in melted butter and roll in the cinnamon sugar mixture.
- Serve warm and enjoy!

- For a richer flavor, you can add nutmeg to the batter.
