Description

Deliciously soft and fluffy muffins coated in cinnamon sugar, perfect for breakfast or a sweet treat.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 large egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ¼ cup melted butter
  • ½ cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, mix the egg, milk, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup about ¾ full with the batter.
  6. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  7. While the muffins are baking, mix the sugar and cinnamon for the coating in a small bowl.
  8. Once the muffins are done, let them cool for a few minutes, then dip the tops in melted butter and roll in the cinnamon sugar mixture.
  9. Serve warm and enjoy!

  • For a richer flavor, you can add nutmeg to the batter.
