Description

A creamy, cheesy casserole made with tender potatoes that brings warmth and comfort to any meal.


Ingredients

  • 2 pounds potatoes, peeled and sliced
  • 1/4 cup butter
  • 1 cup heavy cream
  • 1/2 cup grated cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup chopped fresh chives (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the sliced potatoes in a large pot of salted boiling water for about 5 minutes, then drain.
  3. Melt the butter in a saucepan over medium heat and add the heavy cream. Stir in the cheddar and Parmesan cheeses until melted and smooth. Season with salt and pepper.
  4. Layer the sliced potatoes in a greased baking dish, pouring the cheese sauce over each layer.
  5. Cover with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes until the top is golden brown and bubbly.
  7. Garnish with chopped chives before serving.

Notes

For a deeper flavor, consider adding Gruyère cheese.
