- 2 pounds potatoes, peeled and sliced
- 1/4 cup butter
- 1 cup heavy cream
- 1/2 cup grated cheddar cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 cup chopped fresh chives (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Blanch the sliced potatoes in a large pot of salted boiling water for about 5 minutes, then drain.
- Melt the butter in a saucepan over medium heat and add the heavy cream. Stir in the cheddar and Parmesan cheeses until melted and smooth. Season with salt and pepper.
- Layer the sliced potatoes in a greased baking dish, pouring the cheese sauce over each layer.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the top is golden brown and bubbly.
- Garnish with chopped chives before serving.
Notes
For a deeper flavor, consider adding Gruyère cheese.
