Description

A light and creamy pasta dish perfect for spring, made with Greek yogurt for a healthy twist.


Ingredients

Scale
  • 8 oz pasta of choice
  • 1 cup Greek yogurt
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add cherry tomatoes and spinach, cooking until the spinach wilts.
  4. Reduce heat and stir in Greek yogurt until well combined.
  5. Add the cooked pasta to the skillet and toss to coat.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with fresh basil.
