A delicious and fluffy breakfast dish featuring cloud-like eggs topped with blue cheese and crispy bacon.

- 4 large eggs
- 1/4 cup blue cheese, crumbled
- 4 slices of bacon, cooked and crumbled
- Salt and pepper to taste
- Chives for garnish (optional)
Instructions
- Preheat the oven to 450°F (230°C).
- Separate the egg whites from the yolks, placing the whites in a large mixing bowl.
- Whip the egg whites with a mixer until stiff peaks form.
- Gently fold in the crumbled blue cheese and season with salt and pepper.
- On a baking sheet lined with parchment paper, spoon the whipped egg whites into cloud shapes.
- Make a small indentation in the center of each cloud and carefully place an egg yolk in each.
- Bake in the preheated oven for about 5-7 minutes, until the egg whites are golden and the yolks are set to your liking.
- Remove from the oven and sprinkle with crumbled bacon and chives before serving.
Notes
- For a lighter version, you can omit the bacon or use turkey bacon.
- Feel free to experiment with different cheeses.
