Description

A delicious and fluffy breakfast dish featuring cloud-like eggs topped with blue cheese and crispy bacon.


Ingredients

  • 4 large eggs
  • 1/4 cup blue cheese, crumbled
  • 4 slices of bacon, cooked and crumbled
  • Salt and pepper to taste
  • Chives for garnish (optional)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Separate the egg whites from the yolks, placing the whites in a large mixing bowl.
  3. Whip the egg whites with a mixer until stiff peaks form.
  4. Gently fold in the crumbled blue cheese and season with salt and pepper.
  5. On a baking sheet lined with parchment paper, spoon the whipped egg whites into cloud shapes.
  6. Make a small indentation in the center of each cloud and carefully place an egg yolk in each.
  7. Bake in the preheated oven for about 5-7 minutes, until the egg whites are golden and the yolks are set to your liking.
  8. Remove from the oven and sprinkle with crumbled bacon and chives before serving.

Notes

  • For a lighter version, you can omit the bacon or use turkey bacon.
  • Feel free to experiment with different cheeses.
