Description

Delicious and refreshing cookies perfect for spring, combining the flavors of coconut and key lime.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1/4 cup key lime juice
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, shredded coconut, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted coconut oil, key lime juice, egg, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Chill the dough in the refrigerator for about 30 minutes.
  6. Once chilled, scoop tablespoon-sized portions of dough and roll them into balls.
  7. Roll each ball in powdered sugar until fully coated.
  8. Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
