- 4 boneless, skinless chicken breasts
- 1 cup coconut milk
- Juice of 2 limes
- 2 tablespoons lime zest
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh cilantro for garnish
Instructions
- In a bowl, whisk together coconut milk, lime juice, lime zest, honey, garlic, salt, and pepper.
- Place chicken breasts in a resealable bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and discard the marinade.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
- Remove from the grill and let rest for a few minutes before slicing.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
- For a spicier kick, add red pepper flakes to the marinade.
- This dish pairs well with rice or a fresh salad.
- Leftovers can be stored in the refrigerator for up to 3 days.
