Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup coconut milk
  • Juice of 2 limes
  • 2 tablespoons lime zest
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro for garnish


Instructions

  1. In a bowl, whisk together coconut milk, lime juice, lime zest, honey, garlic, salt, and pepper.
  2. Place chicken breasts in a resealable bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and discard the marinade.
  5. Grill the chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  6. Remove from the grill and let rest for a few minutes before slicing.
  7. Garnish with fresh cilantro and serve with lime wedges.

  • For a spicier kick, add red pepper flakes to the marinade.
