Coddled Eggs with Spinach For St Patrick’s Day

Description

A delightful and healthy dish featuring coddled eggs paired with fresh spinach, perfect for celebrating St. Patrick’s Day.


Ingredients

Scale
  • 4 large eggs
  • 2 cups fresh spinach, chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease four ramekins with butter.
  3. In a skillet, sauté the chopped spinach until wilted.
  4. Divide the sautéed spinach among the ramekins.
  5. Crack an egg into each ramekin over the spinach.
  6. Pour heavy cream over the eggs and sprinkle with Parmesan cheese.
  7. Season with salt and pepper.
  8. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  9. Bake for 15-20 minutes, or until the eggs are set to your liking.
  10. Serve warm, garnished with additional cheese if desired.
