Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the flour, baking soda, and salt in a bowl.
- Beat together the softened butter and granulated sugar until light and fluffy in another bowl.
- Add the egg, vanilla extract, and instant coffee granules to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper, spacing them apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on a wire rack.
- Mix powdered sugar and brewed espresso until smooth and drizzle over cooled cookies.
