Description
A traditional Irish dish made with mashed potatoes and cabbage, perfect for celebrating St. Patrick’s Day.
Ingredients
Scale
- 2 pounds potatoes, peeled and quartered
- 4 cups chopped green cabbage
- 1/2 cup milk
- 1/4 cup butter
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
- In a separate pot, cook the chopped cabbage in boiling water for about 5 minutes until tender.
- Drain the potatoes and return them to the pot.
- Add the milk and butter to the potatoes and mash until smooth.
- Stir in the cooked cabbage and green onions.
- Season with salt and pepper to taste.
- Serve hot, optionally topped with additional butter.

Notes
- For a richer flavor, use cream instead of milk.
- Colcannon can be made ahead of time and reheated before serving.
- Feel free to add cooked bacon or ham for extra flavor.
