Colcannon with Bacon

Description

A classic Irish dish made with mashed potatoes, cabbage, and crispy bacon.


Ingredients

Scale
  • 2 pounds potatoes, peeled and cubed
  • 1/2 head of cabbage, chopped
  • 4 slices of bacon, cooked and crumbled
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. In a separate pot, cook the chopped cabbage in boiling water for about 5 minutes until tender.
  3. Drain the potatoes and return them to the pot.
  4. Add the milk, butter, and season with salt and pepper. Mash until smooth.
  5. Stir in the cooked cabbage and crumbled bacon until well combined.
  6. Serve hot, garnished with additional bacon if desired.

Notes

  • For a creamier texture, add more milk or butter.
  • Can substitute kale for cabbage for a different flavor.
