Description
A classic Irish dish made with mashed potatoes, cabbage, and crispy bacon.
Ingredients
Scale
- 2 pounds potatoes, peeled and cubed
- 1/2 head of cabbage, chopped
- 4 slices of bacon, cooked and crumbled
- 1/2 cup milk
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- In a separate pot, cook the chopped cabbage in boiling water for about 5 minutes until tender.
- Drain the potatoes and return them to the pot.
- Add the milk, butter, and season with salt and pepper. Mash until smooth.
- Stir in the cooked cabbage and crumbled bacon until well combined.
- Serve hot, garnished with additional bacon if desired.

Notes
- For a creamier texture, add more milk or butter.
- Can substitute kale for cabbage for a different flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
